I measure igniter current draw on the spot, and an igniter swap is a one-visit fix with a 90-day consumable warranty.
Convection fan grinding or squealing in the wall oven. Dacor's Pure Convection fan motor develops bearing noise after years of heat cycles, a grinding sound that comes and goes as the oven warms up. In the hills homes with bigger double ovens I see it in the upper cavity first because it gets the most use. Left alone the fan slows, baking goes uneven, and the motor eventually seizes. Motor replacement is straightforward from the rear or inside the cavity depending on model.
Oven baking uneven from a drifted temperature sensor. The RTD temperature probe in Dacor ovens drifts with age. Set 350 and the cavity actually runs 320 or 385, so cookies burn on one sheet and stay raw on the next. In these ranch-house kitchens people compensate for years with the dial before calling. I verify with an independent thermometer against the probe reading, then replace the sensor and check calibration in the service menu.
